Cream Stew with Cod's White Roe & Shiitake Mushroom (助宗鱈の白子と椎茸のクリームシチュー / Sukeso-dara no shirako to shiitake no cream stew)
Oct. 22, 2020
1) Sautee till brown slices of shiitake mushrooms and slices of onion in Calpico butter.
2) Add cod's white roe to 1) and Sautee.
3) Add flour to 2) and Sautee.
4) Add milk to 3) and heat.
5) Add salt to 4) and mix.
Main flavors come from shitake mushroom, cod's white roe, Calpico butter, and salt.
The white roe becomes invisible as you cook, but it adds some 'depth' to the taste.
The taste is subtle. But if your tastes buds aren't too affected by artificial flavorings, you can enjoy its subtlety.
If you find it too bland, I suggest soaking in water dried scallops a few hours prior to cooking and add the flavored water and scallops to 3) together with milk.
Chopped Chinese cabbage can also be a nice addition.
Try it. It's as easy as 1-2-3. It makes you feel nice and warm from within. Highly recommended on a cold night in winter!
